MP4 vs MP3
MP4 is a container. It can hold video, audio, subtitles and chapter markers, and the audio inside is usually AAC. MP3 is an audio-only format that almost every phone, car stereo, media player and editing app can play.
Converting keeps only the sound. If you plan to edit the audio and don't want any further compression, choose WAV or FLAC as the output instead. The files are larger, but they add no new loss on top of the original.
